We've had two holidays in Fuerteventura Sue, one at Xmas in Corralejo and one in May in Caleta de Fuste and enjoyed them both very much
The weather was the Xmas one was unbelievable and we were lucky enough to be sunbathing around the pool on Xmas morning.
Corralejo is just a typical tourist town in the Canaries with all the usual offerings.
You can get a ferry across to Lanzarote from there should you wish to.
If my memory is correct, we stayed in the Atlantis Suite Resort, all inclusive and pretty well faultless.
It was a short stroll from the main town but had it's own small, private beach.
