I will also only offer cash for tips, no way will I add it to the bill cos we like to be sure who will be getting it.
I would normally be the same, although it usually doesn't matter. Last night was an exception though.
We went out with friends for a meal. The restaurant was picked because we all happened to have vouchers for it - most of them being expired due to COVID lockdowns but, after phoning the night before, the restaurant said it would honour them. So a good meal was had by all until it came to bill time. We threw all the vouchers in (some £300 worth) and made up the difference with cash, including a decent tip.
The manageress said that she couldn't accept the vouchers because they were expired - and you sort of know how that conversation went back and forward for a while. In the end she wouldn't back down so we removed the tip from the bill paid the food/bar in cash and threw back in a £60 voucher telling her that was the tip - either pay it to her staff or stiff them, the choice was hers.
Getting work done in the village is cheaper using cash so why should I opt into a system that will add at least 20% to the cost.
Everyone is a tax dodger when it suits.
