I made this for dinner tonight - with quorn, although my husband had some chicken breast with his - and it was absolutely delicious, and so easy. Thanks for sharing the recipe.welshynurse wrote:
500g chicken
1 large onion - chopped
1 apple - cored and chopped
2 garlic cloves - crushed
2 tbsp Korma curry paste
400ml stock
25g raisins
25g chopped dried apricots
1 tbsp cornflour
1 large banana - sliced
4 tbsp low fat yogurt
Brown off the chicken in a little oil, add the onion, apple and garlic and cook for 2-3 mins. Stir in curry paste
Add stock, raisins and apricots. Bring to the boil, reduce heat and simmer, part covered for 35 mins
A few minutes before serving, blend cornflour with 2 tbsp water and stir in. Add banana and cook for a few minutes
Serve with rice, top each portion with the yogurt.
I added the yougurt to the curry before serving, and also this is a very mild recipe, I'm going to add more curry paste next time
